Grilled vegetable burger with spinach and goats

Ingredients

  • 2 Abinda Spinach and Goats’ Cheese Burgers
  • 1 sweet potato, finely sliced
  • ½ courgette, sliced (2 cm)
  • 1 small aubergine, sliced
  • 1 tsp oregano
  • sea salt
  • pepper
  • olive oil

Serve with edible flowers and smoky lentil and sweet pepper salad.

preparation

  1. Fry the vegetable slices in olive oil on the BBQ or in a grill pan.
  2. Coat the aubergine slices in extra olive oil.
  3. Season with oregano and sea salt.
  4. Grill the burgers on the BBQ or in a grill pan.
  5. Remove the vegetable slices from the grill and place them on kitchen paper to absorb the moisture.
  6. Arrange the burgers and vegetable slices into stacks.
  7. Garnish with a cherry tomato and edible flowers or fresh herbs.
  8. Serve with the smoky lentil and sweet pepper salad.
